Chile Navideño from Puebla

I was just in lovely Puebla. I’ve never been and it was a gas. I met some wonderful people and the food was incredible.

I brought back a sack of chiles called Navideño, which are a smoked red chile, like guajillo. The interesting thing is you can tell it’s a wood smoke. It’s absolutely delicious. I haven’t had much time to play with them but I made a quick sauce with one of the chiles, a little tomato and some oregano.

  1. I am so glad you finally made it to Puebla. Isn’t it fabulous?

I must have ‘known’ you were there: I was just thinking this weekend about the tacos árabes at Tacos Tony, and the cemitas at the market…. drool.

I can’t wait to go back to Puebla — and to see your photos. 🙂

  2. I was lucky enough to have an energetic local who showed me around. She knew my time was limited so she whisked me from market to marker to farm and back to market so I barely saw any of the traditional sites. So I need to go back. I remember your talking about the taco arabe and they were good. Kind of like a pork schwarma!
I’ll be posting about some of the things I ate. Some of them were pretty wild and brave, if you know what I mean.
