This is the fussy kind of food preparation I claim to hate but secretly love. I saw this technique in a Mexican food magazine and knew I had to try it.
You wrap a tortilla around a cornet form and then place a second form over the tortilla. Bake at 350F for 10 minutes.
You can fill them with most anything. I made them for a breakfast and added scrambled eggs and leftover salmon.
I think you mean ‘cornet’. A ‘coronet’ is a crown.

great idea to fill with your yummy beans. I love what you’re doing with Rancho Gordo. Taking beans to new (but really old) heights! Beans are going to be a very important food staple as the economy sours…and folks won’t be able to afford flesh as much. I grew the tepary bean you sell this summer to see how it would do, and they turned out great! Now I have enough “stock” to plant for next year. They’re one of my favorites. You have a great blog here too.
