I was reading someone write about Rancho Gordo beans and they described them as exotic. I love being part of the buzz but it seems odd that using our own indigenous food is considered exotic.
If I have a goal, it's that American cooks know their own ingredients. I dream of a day when your average home chef can get a package of Yellow Eyes and immediately think, Mmmmm, pork.
I guess Rancho Gordo is exotic in terms of distribution and how to buy. Most supermarkets in the US seem to only carry great northern, chickpea, kidney, black and pinto beans.

I get a package of yellow eyes and think YUM. and then pork. We had pork, yellow eyes, chard, and cornbread for New Years Day.
Giff, I’ve looked into more wholesaling but it’s a rough road. The smaller stores can’t pay their bills and the big ones don’t know how to sell beans. That’s why our mail order has been successful. I feel like I control the merchandising and you get the best beans possible. And I’m doing my best to keep this flat $8 shipping fee.
