Fun with a Barbecue

It may surprise you to know that I have very little experience with grilling or barbecues. If I've been the host, trying to cook with live coals seems at odds with making the rest of the dinner and it's too stressful. But there is nothing like it.

Dipping my toe into the waters, I bought this nice little cast-iron grill, which is small but a major step up from a hibachi. It's very easy to use and I am a little smitten already.

The tamal wrappers are of course soaked corn husks and those are filled with fish and salsa. One was a corn salsa and the other, much more satisfying, was a tomato chipotle salsa.

The beans in the clay pot were just reheating but I imagine if you were inspired, they could have cooked from the beginning on the fire.

Finally, the coals were still going strong so I added some corn.

It was a swell dinner.

  1. Where did you find it? I’ve been looking for one like that for months. BTW, I made your drunken beans the other night and they were fabulous. Of course, you knew that. 🙂

  2. Is that a Lodge? I’ve been looking for an old-time hibachi for a couple of months now and still haven’t found what I want. The Lodge weighed a ton and wasn’t as adjustable as what I want – one grill height and a possible lower one if you inverted the grill, taking the 1″ leg out of the equation. I’ve read about 500 reviews of various ones currently available but I think I’m going to have to stumble on a 70s model in someone’s garage sale.

  3. This is the Lodge and it’s perfect for me. The last hibachi I bought was too small and lasted about three uses before it broke. I believe I could put a spatchcocked chicken on this one.
    The grill does invert for two levels.
    Bought it on Amazon.
