Refried Beans with Ojo de Tigre

Tiger’s Eye beans (or Ojo de Tigre) have to be one of the prettiest heirlooms ever. They really do remind you of a tiger.

They have a thin skin so home cooks might be frustrated with how fast they can fall apart when cooking with them. Don’t be frustrated! Use them for refried beans.
