Salad Taco

This won't change much in the world but it's an odd little habit I have and I thought I'd pass it on in case it's of interest to you.

You won't see this in Mexico, but when I have a salad, I love to eat it with a corn tortilla. Of course, a Rancho Gordo corn tortilla made from heirloom corn by La Palma, is best but not all of us can make it to the Saturday farmers market in San Francisco. The nice thing is that I can make a dinner of a simple salad and tortillas. I love the flavor of the corn with salad greens and the salad dressing makes it even better.

  1. I do this too! I throw in quinoa or chickpeas, greens, kalamata olives, whatever cooked veggie I have on hand (or not) and drizzle with an ume balsamic vinaigrette. Makes a meal all in itself. Delicious!
