I am currently in the middle of a romance with watercress. It’s a green, it’s healthy, it’s available at my supermarket, etc but the real interest is the flavor. It’s great and it can’t stand up to the boldness of the other ingredients in this salad.

Made this and my family asked for spinach next time. Hard to find watercress in my area and it was a small portion once the roots were cut off. But the other flavors worked very well together. We used a Thai dressing and it really sang. Will be serving this to friends later this week. Thanks for sharing!
